Ingredients

1 lb salmon fillet, skin removed and cut into 1-inch cubes

1 cup fresh pineapple chunks (about 1-inch)

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 teaspoon lime juice

1 teaspoon salt

1/2 teaspoon black pepper

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Prep the Marinade: In a bowl, whisk together the olive oil, soy sauce, honey, minced garlic, minced ginger, lime juice, salt, and black pepper until combined.

    Marinate the Salmon: Place the salmon cubes and pineapple chunks in a large zip-top bag or shallow dish. Pour the marinade over the salmon and pineapple, ensuring everything is well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes and up to 2 hours for maximum flavor.

      Preheat Grill: Preheat your grill to medium-high heat. If using a grill pan, place it over medium heat on the stove.

        Assemble the Kebabs: After marinating, take the salmon and pineapple out of the fridge. Thread the salmon and pineapple chunks onto the skewers, alternating them in a colorful pattern.

          Grill the Kebabs: Place the assembled kebabs on the preheated grill. Cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks, being careful not to overcook. The pineapple should become caramelized and lightly charred.

            Serve: Remove the kebabs from the grill and let them rest for a couple of minutes. Serve hot, garnished with fresh cilantro or lime wedges for an extra burst of flavor.
