Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup powdered sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup ground pistachios

1 teaspoon baking powder

1/4 teaspoon salt

1 tablespoon espresso powder (or finely brewed espresso)

For the Filling:

1/2 cup unsalted butter, softened

1 cup powdered sugar

1 tablespoon milk (more if needed)

1 teaspoon vanilla extract

1 tablespoon pistachio paste (or ground pistachios for texture)

Instructions

Prepare the Cookie Dough: In a large bowl, cream together the softened butter, powdered sugar, and granulated sugar with an electric mixer until light and fluffy. Add the egg and vanilla extract, mixing until combined.

    Mix Dry Ingredients: In a separate bowl, whisk together the flour, ground pistachios, baking powder, salt, and espresso powder.

      Combine Mixtures: Gradually add the dry ingredient mixture to the butter mixture, stirring until the dough comes together. The dough should be soft but not sticky. If it feels too soft, add a tablespoon of flour at a time until it firms up.

        Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to 1 hour, or until firm.

          Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

            Shape Cookies: Remove the dough from the refrigerator and roll it into small balls (about 1 inch in diameter). Place them on the prepared baking sheets, leaving space to spread. Flatten each ball slightly with the bottom of a glass or your palm.

              Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                Make the Filling: In a medium bowl, beat together the softened butter, powdered sugar, milk, vanilla extract, and pistachio paste until smooth and creamy. Adjust the consistency by adding more milk or powdered sugar as desired.

                  Assemble the Sandwich Cookies: Once the cookies are completely cooled, spread a generous dollop of the filling on the flat side of one cookie, then gently press another cookie on top to create a sandwich. Repeat with all cookies.
