1 cup shelled unsalted pistachios, finely chopped

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

¾ cup brown sugar

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

½ cup chopped dried apricots (or your favorite dried fruit)

½ tsp cinnamon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, baking soda, salt, and cinnamon (if using). Whisk until well mixed and set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter with the brown sugar and granulated sugar until light and fluffy. This should take about 3-4 minutes.
