4 large Yukon Gold potatoes, thinly sliced

1 cup smoked sausage, diced (such as kielbasa or andouille)

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

½ cup grated Parmesan cheese (for topping)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Sausage and Onion: In a large skillet, melt the butter over medium heat. Add the diced smoked sausage and cook until lightly browned, about 5 minutes. Add the chopped onion and cook until softened, around another 3-4 minutes. Stir in the minced garlic and thyme, cooking for an additional minute until fragrant. Remove from heat and set aside.

      Prepare the Cream Mixture: In a large mixing bowl, combine the heavy cream, salt, and pepper. Whisk well to combine. You can also stir in half of the cheddar and Gruyère cheeses at this stage to create a creamy cheese sauce.

        Layer the Ingredients: In a greased 9x13 baking dish, layer half of the sliced potatoes evenly. Spoon half of the sausage mixture over the potatoes, followed by half of the creamy cheese sauce. Repeat with the remaining potatoes, sausage mixture, and cream sauce.
