Ingredients

For the Salad:

4 cups mixed greens (spinach, arugula, and romaine)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cup edamame (shelled)

1/2 cup chopped green onions

1/4 cup cilantro leaves, roughly chopped

For the Potstickers:

1 package (about 16) frozen potstickers (chicken, pork, or vegetable)

2 tablespoons vegetable oil (for sautéing)

1/4 cup water (for steaming)

For the Dressing:

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 clove garlic, minced

Optional: sesame seeds for garnish

Instructions

Cook the Potstickers:

    - In a large skillet, heat the vegetable oil over medium heat. Add the frozen potstickers in a single layer and cook for about 2-3 minutes until they are golden brown on the bottom.

      - Add the water to the skillet, cover with a lid, and steam for about 5-7 minutes or until the potstickers are fully cooked and the water has evaporated. Remove from heat and let them cool slightly.

        Prepare the Salad Base:

          - In a large salad bowl, combine the mixed greens, shredded carrots, sliced cucumber, diced red bell pepper, halved cherry tomatoes, edamame, chopped green onions, and cilantro leaves. Toss gently to mix.

            Make the Dressing:

              - In a small bowl or jar, whisk together the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well-combined. Adjust the seasoning to your taste.
