Ingredients

4 large eggs

1/2 cup cottage cheese (low-fat or full-fat based on preference)

2 tablespoons milk (or a dairy-free alternative)

1 tablespoon butter or olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

Fresh chives or parsley, chopped (for garnish)

Cherry tomatoes, halved (for serving, optional)

Instructions

Crack the eggs into a mixing bowl and add the milk, salt, pepper, and garlic powder. Whisk together until well combined and slightly frothy.

    Heat the butter or olive oil in a non-stick skillet over medium heat until hot.

      Pour the egg mixture into the skillet. Let it cook undisturbed for about 30 seconds until the edges start to set.

        Gently stir the eggs with a spatula, pushing the set edges towards the center while allowing the uncooked liquid to flow out to the edges.

          Once the eggs have started to scramble but are still slightly runny, add the cottage cheese to the mixture. Continue to cook gently, stirring occasionally, until the eggs are cooked to your preferred doneness and the cottage cheese is warmed through (about 2-3 minutes).

            Remove from heat, garnish with fresh chives or parsley, and serve hot with halved cherry tomatoes on the side if desired.
