Ingredients

2 cups diced potatoes (about 2 large potatoes)

1 cup pitted prunes, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 cup celery, diced

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

1 teaspoon fresh sage, chopped (or 1/2 teaspoon dried sage)

2 cups vegetable or chicken broth

3 cups cubed stale bread (a mix of white and whole grain works well)

1/4 cup unsalted butter

Salt and pepper to taste

Optional: 1/4 cup walnuts or pecans, chopped for added crunch

Instructions

Prepare the Ingredients: First, peel and dice the potatoes into small cubes. Chop the prunes, onion, celery, and garlic. If you're using nuts, chop them as well.

    Cook the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook until just tender, about 10 minutes. Drain and set aside.

      Sauté the Vegetables: In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and garlic, then sauté until the onion becomes translucent, about 5-7 minutes.

        Combine the Mixture: Stir in the diced potatoes, chopped prunes, thyme, sage, salt, and pepper. Cook for another 3-4 minutes, allowing the flavors to meld together.

          Add the Broth and Bread: Gradually pour in the vegetable or chicken broth, stirring gently to moisten the mixture. Then, fold in the cubed bread and optional nuts until everything is combined.

            Bake the Stuffing: Preheat your oven to 350°F (175°C). Transfer the stuffing mixture to a greased baking dish, spreading it evenly. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15-20 minutes until the top is golden brown and crispy.
