Ingredients

2 cups mashed potatoes (about 3 medium potatoes)

1 cup pitted prunes, chopped

1 ½ cups diced bread (your choice of white or whole grain)

1 small onion, finely chopped

1 clove garlic, minced

½ cup vegetable broth

2 tablespoons unsalted butter

1 tablespoon fresh rosemary, finely chopped

1 teaspoon dried thyme

Salt and pepper to taste

Zest of 1 lemon

Instructions

Preheat your oven to 350°F (175°C).

    In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      In a large bowl, combine the mashed potatoes, chopped prunes, diced bread, sautéed onion and garlic, vegetable broth, fresh rosemary, dried thyme, lemon zest, and season with salt and pepper. Mix until well combined but still slightly chunky.

        Spoon the mixture into a greased baking dish, spreading it out evenly.

          Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.

            Let the stuffing cool for a few minutes before serving. Enjoy it as a centerpiece for your holiday meal or as a delicious side dish!
