Ingredients

2 sheets of frozen puff pastry, thawed

2 large apples (preferably Granny Smith or Pink Lady)

1 lemon, juiced

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 cup apricot jam (or any fruit preserves)

Flour, for dusting

Powdered sugar, for dusting (optional)

Fresh mint leaves, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with cupcake liners.

    Prepare Apples: Slice the apples in half, remove the core, then slice them thinly (about 1/8 inch thick). Place the slices in a bowl and toss with lemon juice to prevent browning.

      Microwave Apple Slices: Fill a microwave-safe bowl with water and the apple slices. Microwave for about 1-2 minutes until they are slightly softened. Drain and let cool slightly.

        Prepare Puff Pastry: Roll out each sheet of puff pastry on a lightly floured surface to smooth it out. Cut each sheet into 6 rectangular strips (about 3 inches wide).

          Layer Apples: On each strip of puff pastry, lay overlapping slices of apple along one edge, allowing part of the apple slices to protrude from the edge of the pastry. Sprinkle a mixture of granulated sugar and cinnamon over the apple slices.

            Fold and Roll: Carefully fold the bottom half of the puff pastry strip over the apple slices, then starting at one end, roll the strip tightly to form a rose shape. Place the rose in the prepared muffin tin. Repeat with the remaining strips and apple slices.

              Glaze: Brush the tops of the puff pastry roses with apricot jam for a beautiful glaze.

                Bake: Bake for 25-30 minutes or until the puff pastry is golden and flaky.

                  Cool and Serve: Allow the apple roses to cool for a few minutes in the tin before removing them. Dust with powdered sugar, garnish with mint leaves if desired, and serve warm.
