Ingredients

1 cup canned pumpkin puree

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional, for consistency)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper for easy removal.

Mix Wet Ingredients: In a large bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well combined.

Combine Dry Ingredients: In another bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix; a few lumps are perfectly fine!

Bake: Pour the batter into the prepared baking pan and spread evenly. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool: Once baked, remove from the oven and let the bars cool completely in the pan on a wire rack before frosting.

Make the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese, unsalted butter, and vanilla extract until smooth and creamy. Gradually add in the powdered sugar, mixing until combined. If the frosting is too thick, add a tablespoon of milk to reach desired consistency.

Frost the Bars: Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top using a spatula.

Serve: Cut into squares and serve. Enjoy the delightful blend of spiced pumpkin and creamy frosting!
