Ingredients

For the Cake:

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup granulated sugar

1 cup packed brown sugar

1 cup vegetable oil

4 large eggs

1 can (15 oz) pure pumpkin puree

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (as needed for consistency)

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan, ensuring it is well coated to prevent sticking.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside.

Beat Sugars and Oil: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Use an electric mixer on medium speed until well blended.

Add Eggs and Pumpkin: Add the eggs, one at a time, mixing well after each addition. Then stir in the pumpkin puree and vanilla extract until fully incorporated.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing. If using, fold in the chopped walnuts or pecans at this stage.

Pour into Bundt Pan: Pour the batter into the prepared bundt pan, smoothing the top with a spatula.

Bake the Cake: Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, remove from the oven and let the cake cool in the pan for about 15 minutes. Then gently turn it out onto a wire rack to cool completely.

Prepare the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Mix well and adjust the consistency with milk, if needed, until it is spreadable.

Frost the Cake: Once the cake is completely cool, drizzle or spread the cream cheese frosting generously over the bundt cake.

Serve and Enjoy: Slice your delicious pumpkin bundt cake and serve it up! Enjoy the warm flavors of fall paired with the creamy sweetness of the frosting.
