Ingredients

For the French Toast:

4 large eggs

1 cup whole milk

1 cup canned pumpkin puree

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

8 slices of thick-cut brioche or challah bread

Butter or oil, for frying

For the Pumpkin Syrup:

1 cup maple syrup

½ cup canned pumpkin puree

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Instructions

Prepare the Pumpkin Syrup:

    - In a small saucepan over low heat, combine maple syrup and pumpkin puree. Stir until well mixed.

      - Add vanilla extract, ground cinnamon, and ground nutmeg. Continue stirring until heated through, about 5 minutes. Remove from heat and set aside.

        Make the French Toast Mixture:

          - In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, ground nutmeg, and ground ginger until smooth and well combined.

            Heat the Skillet:

              - Preheat a large skillet or griddle over medium heat and add a bit of butter or oil to coat the surface.

                Dip the Bread:

                  - Dip each slice of brioche or challah bread into the pumpkin mixture, allowing it to soak for about 20-30 seconds on each side, ensuring it's well coated but not falling apart.

                    Cook the French Toast:

                      - Place soaked bread slices onto the preheated skillet. Cook each side for about 3-4 minutes, or until golden brown and crisp. Repeat with remaining slices, adding more butter or oil as necessary.

                        Serve:

                          - Stack the French toast on plates and drizzle generously with the warm pumpkin syrup. Top with whipped cream or powdered sugar if desired.

                            Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4-6

Enjoy this cozy and flavorful twist on French toast that's perfect for fall breakfasts or holiday brunches!
