1 cup pure pumpkin puree

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

2 teaspoons pumpkin pie spice

1/2 teaspoon salt

1/2 cup white chocolate chips

1/2 cup chopped pecans (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mats for easy cleanup.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.

      Mix Wet Ingredients: Add the pumpkin puree, egg, and vanilla extract to the creamed mixture. Mix until fully combined.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, stirring with a spatula or wooden spoon until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

            Add Chocolate Chips and Pecans: Fold in the white chocolate chips and chopped pecans (if using) until evenly distributed in the dough.
