Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1 cup canned pumpkin puree

1/2 cup milk (dairy or non-dairy)

2 large eggs

1/4 cup brown sugar

1/4 cup melted butter (or coconut oil)

1 teaspoon vanilla extract

Instructions

In a large mixing bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt until well combined.

    In another bowl, mix together the pumpkin puree, milk, eggs, brown sugar, melted butter, and vanilla extract until smooth and creamy.

      Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.

        Preheat your waffle iron according to the manufacturer's instructions.

          Lightly grease the waffle iron with cooking spray or oil if needed.

            Pour enough batter onto the waffle iron to cover the surface, close the lid, and cook until crispy and golden brown (typically 4-6 minutes, check your waffle iron settings).
