Ingredients

  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic finely minced
  • 1 tablespoon fresh ginger grated
  • 1 cup broccoli florets
  • 1 medium bell pepper sliced
  • 1 medium carrot thinly sliced
  • 2 tablespoons sesame seeds
  • 2 green onions sliced for garnish
  • cooked brown rice or quinoa for serving
  • salt and pepper to taste

Instructions

  • Combine diced chicken with sesame oil, soy sauce, honey or maple syrup, garlic, and ginger in a bowl. Marinate for at least 15 minutes.
  • Preheat a skillet or wok over medium-high heat. Add marinated chicken and cook for 5-7 minutes until golden brown.
  • Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for another 5 minutes until vegetables are tender yet crisp.
  • Sprinkle sesame seeds over the mixture and stir to combine. Cook for an additional 1-2 minutes to toast the seeds.
  • Season with salt and pepper to taste. Remove from heat and garnish with sliced green onions.
