Ingredients

1 cup dried apricots, chopped

1 cup walnuts, roughly chopped

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

Mix Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

Combine Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; it’s okay if there are a few lumps.

Fold in Fruits and Nuts: Carefully fold in the chopped apricots and walnuts with a spatula, ensuring they are evenly distributed throughout the batter.

Pour Batter into Pan: Pour the batter into the prepared cake pan, spreading it evenly.

Bake: Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Serve & Enjoy: Slice the fruitcake and serve it warm or at room temperature. It pairs beautifully with a cup of tea or coffee.
