Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons garlic paste

2 tablespoons ginger paste

1 tablespoon lemon juice

2 tablespoons vegetable oil

1 medium onion, finely chopped

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon turmeric

1 cup tomato puree

1 cup heavy cream

1 tablespoon sugar (optional)

Salt to taste

Fresh cilantro for garnish

Cooked basmati rice or naan for serving

Instructions

In a large bowl, combine the chicken pieces, yogurt, garlic paste, ginger paste, and lemon juice. Mix well and let marinate for at least 30 minutes (or up to 2 hours for extra flavor) in the refrigerator.

    Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5-7 minutes.

      Add the marinated chicken to the skillet and cook for about 5-6 minutes, stirring occasionally, until the chicken is browned on all sides.

        Stir in the garam masala, ground cumin, paprika, and turmeric. Cook for another minute until the spices are fragrant.

          Pour in the tomato puree and stir well. Simmer the mixture for about 10 minutes, allowing the chicken to cook through.

            Reduce the heat to low and stir in the heavy cream. If a sweeter sauce is desired, add the sugar at this stage. Simmer for an additional 5 minutes, adjusting the seasoning with salt as needed.

              Remove from heat and garnish with freshly chopped cilantro.

                Serve the butter chicken hot with cooked basmati rice or warm naan, allowing everyone to enjoy it to their heart's content!
