Ingredients

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ ripe avocado thinly sliced
  • ½ cucumber julienned
  • ½ cup shredded carrots
  • ½ cup shelled edamame
  • ½ cup radishes paper-thin slices
  • ½ cup cooked shrimp or crab meat optional
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • Nori sheets cut into strips (for garnish)
  • Pickled ginger for serving

Instructions

  • Rinse the sushi rice under cold water until clear, then drain.
  • Combine the rinsed rice with water in a saucepan and bring to a boil.
  • Reduce heat to low, cover, and simmer for 18 minutes until water is absorbed.
  • Remove from heat and let sit covered for 10 minutes.
  • Whisk together rice vinegar, sugar, and salt until dissolved, then fold into the rice.
  • In a serving bowl, layer the sushi rice and arrange avocado, cucumber, carrots, edamame, radishes, and optional seafood on top.
  • Drizzle with soy sauce and sesame oil, then sprinkle with sesame seeds.
  • Garnish with nori strips and serve with pickled ginger.
