Ingredients

2 cups fresh rhubarb, chopped

1 cup granulated sugar

4 cups water, divided

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup fresh mint leaves (optional, for garnish)

Lemon slices (for garnish)

Instructions

In a medium saucepan, combine the chopped rhubarb, 1 cup of water, and sugar. Bring to a boil over medium heat, stirring occasionally to dissolve the sugar.

    Once boiling, reduce the heat and let it simmer for about 10 minutes, or until the rhubarb has broken down and the mixture looks syrupy.

      Remove from heat and strain the rhubarb mixture through a fine-mesh sieve into a large pitcher, pressing with the back of a spoon to extract as much liquid as possible. Discard the solids.

        Add the remaining 3 cups of cold water and the freshly squeezed lemon juice to the rhubarb syrup in the pitcher. Stir well to combine.

          Taste the lemonade and adjust sweetness if desired by adding more sugar or lemon juice, based on your preference.

            Refrigerate for at least 30 minutes to chill and allow the flavors to meld.

              Serve over ice, garnished with fresh mint leaves and lemon slices.
