Ingredients

1 cup semolina

1 cup granulated sugar

1 cup plain yogurt

1/2 cup vegetable oil (or melted butter)

4 large eggs

2 tsp baking powder

1 tsp vanilla extract

Zest of 1 lemon (optional)

1/2 tsp salt

1 cup water

1 cup sugar (for syrup)

1/2 cup fresh lemon juice (for syrup)

Sliced almonds or pistachios (for garnishing)

Instructions

Prepare the Syrup: In a small saucepan, combine 1 cup of sugar and 1 cup of water. Bring to a boil over medium heat and let it simmer for about 5 minutes until slightly thickened. Remove from heat and stir in freshly squeezed lemon juice. Let it cool.

    Preheat Oven: Preheat your oven to 350°F (175°C) and grease a rectangular cake pan (9x13 inches).

      Combine Dry Ingredients: In a large bowl, mix the semolina, baking powder, and salt. Set aside.

        Mix Wet Ingredients: In another bowl, whisk together the eggs, sugar, yogurt, vegetable oil (or melted butter), vanilla extract, and lemon zest until well combined.

          Combine Mixtures: Slowly add the dry ingredients to the wet mixture, stirring gently until just blended. Make sure not to overmix.

            Pour into Pan: Pour the batter into the greased cake pan and spread it evenly.

              Bake: Bake in the preheated oven for about 30-35 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.

                Soak the Cake: Once baked, remove the cake from the oven and immediately pour the cooled syrup evenly over the hot cake. Let it soak for at least 30 minutes.

                  Garnish & Serve: Cut the Revani into diamond or square pieces. Garnish with sliced almonds or pistachios if desired. Serve your Revani either warm or at room temperature.
