12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, your choice)

1 medium zucchini, diced

1 can (14 oz) diced tomatoes (with juices)

2 cloves garlic, minced

1 small onion, chopped

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

1/4 cup fresh basil, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, remove the sausage from its casing and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes.

      Sauté the Vegetables: Add the chopped onion and minced garlic to the skillet with the sausage. Sauté for about 3 minutes until the onion becomes translucent. Add in the diced zucchini and cook for another 3-4 minutes until it starts to soften.

        Combine with Tomatoes: Stir in the diced tomatoes (including their juices) along with the dried oregano, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for approximately 5-7 minutes until the sauce has thickened slightly.

          Mix Pasta and Sauce: Add the cooked rigatoni to the skillet, tossing well to combine. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.

            Serve and Garnish: Plate the rigatoni mixture in bowls, garnishing with fresh basil and a generous sprinkle of grated Parmesan cheese.
