Ingredients

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1/4 teaspoon coconut extract

1 large egg

2 cups sweetened shredded coconut

1 cup semisweet chocolate chips

1 teaspoon vegetable oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Make the Cookie Dough:

      - In a small bowl, whisk together the flour, baking powder, and salt; set aside.

        - In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and well combined.

          - Add the vanilla extract, coconut extract, and egg to the butter mixture, mixing until fully incorporated.

            - Gradually add the flour mixture to the wet ingredients and mix just until combined. The dough will be thick.

              Shape the Cookies:

                - Roll the dough into balls about 1 inch in diameter and place them onto the prepared baking sheets, spacing them about 2 inches apart.

                  - Using your thumb or the end of a wooden spoon, create an indentation in the center of each cookie, forming a well.

                    Prepare the Coconut Topping:

                      - Spread the shredded coconut evenly on a baking sheet and toast in the oven for about 5–7 minutes, stirring halfway through, until golden brown. Keep an eye on it to prevent burning.

                        Bake Cookies:

                          - Place the cookies in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. Remove and let them cool on the baking sheets for a few minutes before transferring them to a wire rack.

                            Prepare the Caramel-Coconut Topping:

                              - In a medium saucepan over low heat, combine 1 cup of the toasted coconut and 1 cup of caramel sauce, mixing until heated through and combined.

                                Assemble the Cookies:

                                  - Spoon the caramel-coconut mixture over each cookie, spreading it into the indentation. Make sure to cover the hole completely.

                                    Melt Chocolate:

                                      - In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

                                        Drizzle Chocolate:

                                          - Using a fork, drizzle the melted chocolate over the caramel-coconut topped cookies, allowing it to set slightly before serving.

                                            Cool and Enjoy:
