Ingredients

1 can of fresh sardines in olive oil (about 120g)

2 slices of whole grain bread

1 tablespoon of Dijon mustard

1 small red onion, thinly sliced

1 tablespoon of capers, rinsed and drained

1 lemon, zested and juiced

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

A drizzle of extra virgin olive oil

Instructions

Toast the Bread: Begin by toasting the whole grain bread slices until they are golden brown and crispy. You can use a toaster or a skillet over medium heat for this.

    Prepare the Sardines: Open the can of sardines and carefully drain out the excess oil, reserving a small amount for added flavor if desired. Gently remove the sardines and set them aside.

      Mix the Topping: In a small bowl, combine the Dijon mustard, lemon juice, lemon zest, and a pinch of salt and pepper. Mix until smooth.

        Assemble the Toast: Spread the mustard mixture evenly on each slice of toasted bread. Layer the sardines on top of the mustard, followed by the sliced red onion and capers.
