Ingredients

1 pound breakfast sausage (mild or spicy, based on preference)

1 bag (30 oz) frozen hashbrowns (shredded)

6 large eggs

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup milk

1/4 cup chopped green onions (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing the pan

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.

Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into small pieces as it cooks. Drain excess fat if necessary, then set aside.

Mix the Cream Cheese Layer: In a mixing bowl, combine the softened cream cheese and milk. Use an electric mixer or a whisk to blend until smooth and creamy. Add in the garlic powder, onion powder, salt, and pepper, mixing well.

Combine the Ingredients: In a large bowl, mix the cooked sausage with frozen hashbrowns, the cream cheese mixture, and half of the shredded cheddar cheese. If you like, fold in the chopped green onions for added flavor.

Layer in the Baking Dish: Spread the mixture evenly in the greased baking dish. Create little wells in the mixture for the eggs.

Add the Eggs: Crack the eggs individually into the wells you made in the hashbrown mixture. Sprinkle the remaining shredded cheddar cheese over the top.

Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the eggs are set to your liking and the top is bubbly and golden.

Cool and Serve: Once cooked, let the casserole cool for about 10 minutes before slicing. Serve warm, garnished with additional green onions if desired.
