Ingredients

1 pound Italian sausage (bulk or casings removed)

1 cup celery, diced

1 cup onion, diced

1 cup carrots, diced

2 cups crusty bread, cubed (preferably stale or toasted)

1 teaspoon dried sage

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/4 cup fresh parsley, chopped

2 cups low-sodium chicken broth

1/4 cup unsalted butter

Salt and pepper to taste

2 large eggs, lightly beaten

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a skillet over medium heat, crumble and cook the Italian sausage until browned and fully cooked. Use a slotted spoon to transfer the sausage to a large mixing bowl, leaving the drippings in the pan.

      Sauté the Vegetables: In the same skillet, add the butter to the drippings. Once melted, add the diced celery, onion, and carrots. Sauté until the vegetables are tender, about 5-7 minutes.

        Combine Ingredients: In the mixing bowl with the sausage, add the sautéed vegetables. Stir in the bread cubes, dried herbs (sage, thyme, and rosemary), chopped parsley, salt, and pepper.

          Add Broth and Eggs: Pour in the chicken broth and beaten eggs. Mix everything gently until the bread is evenly coated and moistened but not soggy.

            Bake the Stuffing: Transfer the mixture to a greased baking dish. Cover with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until golden brown and crispy on top.
