Ingredients

  • 1 pound lean ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 can 15 oz black beans, rinsed and drained
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded sharp cheddar cheese
  • Fresh cilantro chopped, for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the ground beef in a large skillet over medium heat until browned, then drain excess fat.
  • Add diced onion and minced garlic, sauté until the onion is soft.
  • Stir in chili powder, ground cumin, and black beans, mixing thoroughly.
  • Spread 1 cup of enchilada sauce in the bottom of a baking dish.
  • Warm tortillas until soft, fill with beef mixture, roll tightly, and place seam-side down in the dish.
  • Drizzle remaining enchilada sauce over the tortillas and sprinkle with cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly.
