Ingredients

  • 9 whole wheat lasagna noodles
  • 2 cups cooked and shredded chicken breast
  • 2 cups low-fat ricotta cheese
  • 2 cups fresh spinach finely chopped
  • 1 cup marinara sauce
  • 1 cup shredded part-skim mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning blend
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the whole wheat lasagna noodles according to package directions until al dente, then drain and set aside.
  • In a mixing bowl, combine ricotta cheese, chopped spinach, Italian seasoning, salt, and pepper until well blended.
  • Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
  • Layer 3 lasagna noodles on top, then spread half of the ricotta-spinach mixture over them.
  • Add half of the shredded chicken, drizzle with marinara sauce, and sprinkle with mozzarella cheese.
  • Repeat layering with remaining ingredients: noodles, ricotta mixture, chicken, marinara, and mozzarella.
  • Top with the last 3 noodles, cover with marinara, and sprinkle remaining mozzarella and Parmesan cheese.
  • Cover with aluminum foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes.
  • Let cool for 10 minutes before slicing and serving.

Let the lasagna cool for 10 minutes before serving for easier slicing.
