2 cups leftover cooked rice (preferably chilled)

1 lb boneless, skinless chicken thighs, diced

1 cup mixed vegetables (peas, corn, and carrots)

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce

2 tablespoons teriyaki sauce

2 tablespoons sesame oil

2 eggs, beaten

Salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, combine the diced chicken, soy sauce, teriyaki sauce, ginger, and garlic. Let it marinate for at least 15 minutes to absorb the flavors.
