Ingredients

  • 4 medium-sized kohlrabi bulbs
  • 1 pound ground pork
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup cooked rice
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt and freshly cracked pepper
  • 1 cup shredded cheese
  • 1 tablespoon extra virgin olive oil
  • for garnish fresh parsley chopped

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice off the tops of the kohlrabi bulbs and scoop out the insides, leaving a ½ inch thick shell.
  • In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté until translucent.
  • Add ground pork to the skillet and cook until browned and fully cooked.
  • Stir in reserved kohlrabi flesh, cooked rice, thyme, paprika, salt, and pepper until well combined.
  • Stuff each kohlrabi bulb with the pork mixture and arrange in a baking dish.
  • Sprinkle shredded cheese over the top of each stuffed kohlrabi.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10 minutes until cheese is melted and golden.
  • Garnish with chopped parsley before serving.

Notes

For an elegant presentation, serve on a rustic platter with olive oil and parsley.
