Ingredients

  • 2 large sweet potatoes peeled and cut into 1-inch cubes
  • 1 pound ground turkey
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 cup fresh spinach roughly chopped
  • 1 cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • to taste salt and freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • ½ cup low-sodium chicken broth
  • to taste fresh parsley chopped

Instructions

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat, then add diced onion and minced garlic, sautéing for about 5 minutes.
  • Add ground turkey to the skillet, breaking it up, and cook for 7-10 minutes until browned.
  • Season the turkey with smoked paprika, oregano, cumin, salt, and pepper, cooking for an additional 2 minutes.
  • Stir in chopped spinach until wilted, about 2 minutes, then remove from heat.
  • In a large baking dish, combine diced sweet potatoes with chicken broth, seasoning with salt and pepper.
  • Layer the cooked turkey and spinach mixture over the sweet potatoes.
  • If desired, sprinkle shredded cheddar cheese on top.
  • Cover with aluminum foil and bake for 25 minutes, then remove foil and bake for another 15-20 minutes until sweet potatoes are tender.
  • Garnish with freshly chopped parsley before serving.
