Ingredients

  • 1 lb wild boar meat cut into small cubes
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 cup fresh mushrooms sliced
  • 1 cup rich beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt
  • to taste freshly ground black pepper
  • 1 sheet puff pastry thawed
  • 1 egg beaten for egg wash

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, sauté the onion and garlic until soft.
  • Add the wild boar meat and cook until browned on all sides.
  • Incorporate the carrots and mushrooms, cooking for an additional 5 minutes.
  • Pour in the beef broth and Worcestershire sauce, then add thyme, rosemary, salt, and pepper.
  • Let the mixture simmer for about 15 minutes to thicken.
  • Roll out the puff pastry and line a pie dish, leaving overhanging edges.
  • Spoon the wild boar filling into the pastry-lined dish and cover with another layer of pastry.
  • Seal the edges and cut slits in the top for steam to escape.
  • Brush the top with beaten egg and bake for 25-30 minutes until golden brown.
