Ingredients

4 large eggs

1 cup fresh spinach, chopped

1 ripe avocado, diced

2 tablespoons milk (or cream for a richer taste)

1 tablespoon olive oil or butter

Salt and pepper to taste

Optional: 1 tablespoon feta cheese, crumbled

Optional: a squeeze of lemon juice for extra freshness

Instructions

In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined and slightly frothy.

    Heat the olive oil or butter in a non-stick skillet over medium heat. Once melted and heated, add the chopped spinach. Sauté for about 1-2 minutes until the spinach has wilted.

      Pour the egg mixture over the wilted spinach in the skillet. Allow it to sit for a few seconds without stirring, then gently stir with a spatula.

        Cook the eggs, stirring occasionally, until they are just set but still slightly creamy, about 3-4 minutes. Remove from heat.
