Ingredients

2 tablespoons olive oil

1 medium onion, diced

1 bell pepper (red or yellow), diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust to taste)

1 can (15 oz) crushed tomatoes

1 can (15 oz) black beans, drained and rinsed

4 large eggs

Salt and pepper, to taste

Fresh herbs (cilantro or parsley), for garnish

Feta cheese, crumbled (optional)

Crusty bread, for serving

Instructions

In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.

    Add minced garlic, cumin, smoked paprika, and chili powder. Sauté for another minute until fragrant.

      Stir in the crushed tomatoes and black beans. Season with salt and pepper. Bring the mixture to a simmer and cook for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken.

        Using a spoon, create small wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-8 minutes.

          Remove from heat and garnish with fresh herbs and feta cheese, if using.

            Serve hot with crusty bread for dipping.
