Shawarma is more than just a beloved street food; it is a culinary experience that encapsulates the vibrant flavors and rich traditions of Middle Eastern cuisine. Originating from the Levant region, shawarma consists of marinated meat, typically lamb, chicken, or beef, that is slow-cooked on a vertical rotisserie. This method of cooking infuses the meat with deep, savory flavors while creating a crispy outer layer. Traditionally served in pita bread or with rice and a variety of accompaniments, shawarma has gained global popularity and is often accompanied by an array of sauces that enhance its deliciousness.

Ingredients

1 cup plain Greek yogurt

2 tablespoons tahini

3 cloves garlic, minced

1 tablespoon lemon juice (freshly squeezed)

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon smoked paprika

½ teaspoon salt (or to taste)

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for heat)

2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

In a medium mixing bowl, combine the Greek yogurt and tahini. Whisk together until smooth and creamy.

Add the minced garlic, lemon juice, and olive oil to the bowl. Mix well to incorporate all the ingredients.

Sprinkle in the ground cumin, ground coriander, smoked paprika, salt, black pepper, and cayenne pepper (if using). Stir until well combined.

Taste and adjust seasoning as needed—add more salt or lemon juice if necessary.

Once everything is well combined, cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

Before serving, stir the sauce again and garnish with chopped parsley for freshness and a pop of color.

Serve alongside your favorite shawarma, grilled meats, or as a dip for fresh veggies and pita bread.
