Ingredients

1 pound ground lamb (or beef)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup beef broth

Salt and pepper to taste

2 tablespoons olive oil

For the Potato Topping:

2 pounds russet potatoes, peeled and cubed

1/2 cup milk (or cream for richer taste)

4 tablespoons unsalted butter

Salt and pepper to taste

1/2 cup shredded cheddar cheese (optional for a cheesy topping)

Instructions

Prepare the Potatoes:

    - In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.

      Make the Mashed Potatoes:

        - Add butter, milk (or cream), salt, and pepper to the drained potatoes. Mash until smooth and creamy. Set aside.

          Cook the Filling:

            - In a large skillet, heat olive oil over medium heat. Add the chopped onions and carrots. Sauté for about 5 minutes until softened.

              - Add minced garlic and cook for an additional minute until fragrant.

                - Add the ground lamb (or beef) to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

                  Season and Combine:

                    - Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and beef broth. Let it simmer for 10 minutes, allowing the mixture to reduce slightly. Season with salt and pepper to taste. Stir in the frozen peas at the end and set aside.

                      Assemble the Shepherd’s Pie:

                        - Preheat your oven to 400°F (200°C).

                          - In a baking dish, layer the meat filling at the bottom. Top with the mashed potatoes, spreading it evenly with a spatula. If desired, sprinkle shredded cheddar cheese over the top for a cheesy crust.
