Ingredients

1 cup jasmine or short-grain rice

1/2 cup spinach, blanched

1/2 cup carrots, julienned

1/2 cup zucchini, julienned

1/2 cup shiitake mushrooms, sliced

2 eggs

2 tablespoons gochujang (Korean red pepper paste)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon sesame seeds

2 green onions, finely chopped

Salt to taste

Instructions

Begin by cooking the rice according to package instructions. Once done, set aside to keep warm.

    In a skillet, heat the vegetable oil over medium heat. Sauté the julienned carrots for about 3 minutes until they are tender. Season with a pinch of salt and remove from the skillet.

      In the same skillet, add the zucchini and sauté for 2–3 minutes until slightly softened. Remove and set aside with the carrots.

        Next, add the sliced shiitake mushrooms to the skillet and sauté until they are tender, about 4–5 minutes. Season lightly with salt and set aside.

          For the blanched spinach, squeeze out any excess water and place in a bowl. Drizzle with a little sesame oil and mix well.

            In a separate pan, fry the eggs sunny-side up to your desired doneness. The yolk should be runny for a perfect bibimbap.

              To assemble the bibimbap, divide the warm rice into two serving bowls. Arrange the sautéed carrots, zucchini, mushrooms, and spinach beautifully on top of the rice in sections.

                Top each bowl with a fried egg and a dollop of gochujang. Sprinkle sesame seeds and chopped green onions over the top for garnish.

                  Serve immediately, mixing all ingredients together in each bowl just before eating.
