Ingredients

2 large hard-boiled eggs, peeled and chopped

1 cup cottage cheese (full-fat or low-fat)

¼ cup finely diced red onion

¼ cup diced cucumber

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

Optional: 1 teaspoon paprika for garnish

Optional: Fresh lettuce leaves or whole grain bread for serving

Instructions

Begin by steaming or boiling the eggs until hard-boiled, about 10-12 minutes. Once cooked, place them in cold water to cool, then peel and chop.

    In a mixing bowl, combine the cottage cheese, chopped eggs, red onion, cucumber, Dijon mustard, dill, and lemon juice.

      Gently fold the ingredients together until fully combined; take care not to mush the eggs too much.

        Season the mixture with salt and pepper according to your taste.

          If using, sprinkle paprika on top for an extra hint of flavor and color.

            Serve the egg salad on a bed of fresh lettuce or spread it generously on whole grain bread for a delicious sandwich.
