Ingredients

1 lb beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 large onion, sliced into rings

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

2 cloves garlic, minced

1 teaspoon ginger, minced

1 teaspoon black pepper

1 teaspoon sesame oil

Cooked jasmine rice or noodles (for serving)

Fresh cilantro (for garnish)

Instructions

Marinate the Beef: In a mixing bowl, combine the sliced beef, soy sauce, oyster sauce, black pepper, and cornstarch. Mix well and let it marinate for at least 15 minutes to tenderize the meat and infuse flavor.

    Prepare the Vegetables: While the beef is marinating, slice the onion and bell peppers. Mince the garlic and ginger, and set aside.

      Heat the Wok: Heat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over high heat until it's shimmering. Be careful not to let it smoke.

        Stir-Fry the Beef: Add the marinated beef to the hot pan in a single layer. Stir-fry for about 2-3 minutes until the beef is browned (don’t overcrowd the pan; cook in batches if necessary). Remove the beef from the wok and set it aside.

          Sauté the Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the sliced onions and cook for about 2 minutes until they become translucent. Then, add minced garlic and ginger, stirring constantly until fragrant (about 30 seconds).

            Add the Peppers: Incorporate the sliced red and green bell peppers into the wok. Stir-fry for an additional 3-4 minutes until they are tender but still crisp.

              Combine Ingredients: Return the cooked beef to the wok, tossing everything together. Drizzle with sesame oil, and stir well to combine all flavors. Cook for another minute to heat through.

                Serve: Serve the sizzling pepper steak hot over jasmine rice or noodles. Garnish with fresh cilantro if desired, and enjoy!
