Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar (adjust to taste)

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk (dairy or non-dairy)

1 large egg

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Oil for frying (vegetable or coconut)

Powdered sugar for dusting (optional)

Instructions

In a medium bowl, mash the ripe bananas until smooth. Leave some small lumps for texture if desired.

    In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

      In a separate bowl, combine the milk, egg, and vanilla extract. Mix until fully combined.

        Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix. Fold in the mashed bananas and nuts if using.

          Heat about 1/4 inch of oil in a non-stick skillet over medium heat. You can test if it’s ready by dropping a small amount of the batter in; it should sizzle.
