Ingredients

1 lb ground turkey

8 oz egg noodles

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, diced

2 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup sour cream

1 cup shredded cheddar cheese

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil and cook the egg noodles according to package directions until al dente. Drain and set aside.

    Sauté the Turkey: In a large skillet over medium heat, heat olive oil. Add the diced onion and garlic. Sauté for about 3-4 minutes until the onion is translucent. Add the ground turkey, breaking it up with a spatula. Cook until browned, about 5-7 minutes.

      Add Vegetables and Seasonings: Stir in the frozen mixed vegetables, thyme, paprika, salt, and pepper. Cook for another 3-4 minutes, letting the veggies thaw and combine with the turkey.

        Combine Everything: Pour in the chicken broth and bring to a simmer. Reduce heat to low, then add the cooked noodles and sour cream. Mix everything together until well combined.

          Cheesy Finish: Sprinkle shredded cheddar cheese evenly over the top of the mixture. Cover the skillet with a lid and let it cook for an additional 5 minutes until the cheese has melted.

            Serve: Remove from heat. Garnish with fresh parsley before serving. Enjoy your one-pan meal!
