Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1 tablespoon extra virgin olive oil
  • ½ cup cream cheese softened

Instructions

  • In a skillet over medium heat, warm the olive oil and sear the chicken breasts for 2-3 minutes on each side.
  • Transfer the seared chicken breasts to the slow cooker.
  • Add the long-grain rice, chicken broth, garlic powder, onion powder, and season with salt and pepper in the slow cooker.
  • Fold in the frozen mixed vegetables and softened cream cheese, mixing well.
  • Cover and cook on low for 4-6 hours until the chicken is cooked and rice is tender.
  • Shred the chicken in the slow cooker using two forks.
  • Stir in the shredded cheddar cheese until melted and creamy.
  • Taste and adjust seasoning if necessary, then serve hot.
