Ingredients

4 boneless, skinless chicken breasts

1 medium onion, finely chopped

1 red bell pepper, sliced

1 green bell pepper, sliced

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, including juice

1 can (8 oz) tomato sauce

1 cup low-sodium chicken broth

1 cup fresh mushrooms, sliced

2 teaspoons dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional)

Salt and black pepper, to taste

Fresh basil or parsley for garnish

Cooked pasta or creamy polenta, for serving

Instructions

Begin by laying the chicken breasts flat at the bottom of the slow cooker. Generously season them with salt and freshly cracked black pepper.

In a large mixing bowl, combine the chopped onion, sliced red and green bell peppers, minced garlic, diced tomatoes (juice included), tomato sauce, chicken broth, sliced mushrooms, dried oregano, dried basil, and crushed red pepper flakes (if using). Mix these ingredients thoroughly to create a rich vegetable mixture.

Carefully pour the vegetable mixture over the seasoned chicken in the slow cooker, making sure to completely cover the chicken.

Secure the lid on the slow cooker and set it to the low heat setting for 6 to 8 hours, or high heat for 3 to 4 hours, until the chicken is fully cooked and tender.

After the cooking period, use two forks to shred the chicken directly in the slow cooker. Stir everything together, ensuring the chicken is well integrated with the flavorful sauce and vegetables.

Taste the dish and adjust the seasoning with additional salt and pepper if needed.

Serve the hearty chicken cacciatore over a bed of warm pasta or silky polenta, and finish with a sprinkle of fresh basil or parsley for a burst of color and freshness.

Optional Presentation Tips: For an elegant touch, serve in shallow bowls, topping with a drizzle of olive oil and a sprinkle of freshly grated Parmesan cheese. Add a side of crusty bread to soak up the delicious sauce!
