Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 can 15 oz white beans, drained and rinsed
  • 1 cup corn kernels
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 can 4 oz diced green chilies
  • 2 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • to taste salt
  • to taste freshly cracked black pepper
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • to taste fresh cilantro chopped

Instructions

  • Place the chicken breasts at the bottom of the slow cooker.
  • Layer the white beans, corn, onion, garlic, and green chilies over the chicken.
  • Pour the chicken broth over the layered ingredients.
  • Sprinkle cumin, chili powder, salt, and pepper on top.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Shred the chicken in the slow cooker with two forks.
  • Stir in sour cream and Monterey Jack cheese until melted.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with cilantro if desired.
