Ingredients

2 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1 tablespoon cornstarch (for thickening)

2 tablespoons cold water

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, black pepper, and red pepper flakes until well combined.

    Place the chicken thighs in the slow cooker. Pour the honey garlic mixture over the chicken, making sure they are well coated.

      Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and fully cooked.

        If you prefer a thicker sauce, in the last 30 minutes of cooking, mix the cornstarch with cold water in a small bowl to create a slurry. Stir the slurry into the slow cooker and mix well to combine with the sauce.

          Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it back in with the sauce.

            Serve the honey garlic chicken over rice or noodles. Garnish with sliced green onions and a sprinkle of sesame seeds.
