Ingredients

  • 1 pound ground beef or ground turkey
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 can 10 oz creamy nacho cheese soup
  • 2 cups low-sodium chicken broth
  • 1 tablespoon taco seasoning
  • 1 teaspoon ground cumin
  • to taste salt and freshly ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup tortilla chips crushed
  • ¼ cup sliced jalapeños optional
  • to taste fresh cilantro chopped
  • to serve sour cream

Instructions

  • Brown the ground beef or turkey in a skillet, breaking it into smaller pieces.
  • Add diced onion and minced garlic to the skillet and sauté until translucent.
  • Transfer the meat mixture to the slow cooker.
  • Add black beans, corn, diced tomatoes, nacho cheese soup, chicken broth, taco seasoning, ground cumin, salt, and pepper to the slow cooker.
  • Stir well to combine all ingredients.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • 30 minutes before serving, stir in shredded cheddar cheese and crushed tortilla chips.
  • Continue cooking until cheese is melted and soup is heated through.
  • Ladle soup into bowls and garnish with cilantro, jalapeños, sour cream, and extra tortilla chips.

Notes

For extra flavor, serve with lime wedges and additional toppings.
