Ingredients

1.5 lbs of lamb shoulder, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, finely chopped

4 garlic cloves, minced

2 medium carrots, diced

2 medium potatoes, diced

1 cup green bell pepper, diced

1 cup canned chickpeas, drained and rinsed

1 can (14 oz) crushed tomatoes

2 cups vegetable or chicken broth

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley for garnish

Lemon wedges, for serving

Instructions

Sear the Lamb: In a skillet, heat the olive oil over medium-high heat. Add the lamb cubes in batches and sear until browned on all sides. Transfer the seared lamb to the slow cooker.

    Sauté the Vegetables: In the same skillet, add the chopped onion and garlic. Sauté for about 3 minutes until translucent. Add the carrots, potatoes, and bell pepper. Cook for an additional 5 minutes until slightly softened.

      Combine Ingredients: Add the sautéed vegetables to the slow cooker with the lamb. Stir in the chickpeas, crushed tomatoes, and broth. Sprinkle in the cumin, coriander, cinnamon, smoked paprika, salt, and pepper. Mix well to combine all ingredients.

        Slow Cook: Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours until the lamb is tender and the flavors are well blended.

          Garnish and Serve: Once cooked, taste and adjust seasoning if necessary. Ladle the Kawaj into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for an added zesty flavor.
