Ingredients

  • 1 lb ground beef or turkey
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips crushed
  • 2 cups shredded cheese
  • 1 cup sour cream
  • ½ cup diced onions
  • ½ cup sliced black olives
  • to taste fresh cilantro
  • to serve slices of avocado

Instructions

  • Brown the meat in a skillet over medium heat until no longer pink, then drain excess grease.
  • In the slow cooker, combine the cooked meat, black beans, corn, diced tomatoes, taco seasoning, and optional onions.
  • Spread half of the crushed tortilla chips over the meat mixture, then sprinkle half of the shredded cheese on top.
  • Spoon the remaining meat mixture over the cheese layer, followed by the rest of the crushed tortilla chips.
  • Top with the remaining shredded cheese to create a cheesy crown.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours until the cheese is melted and bubbling.
  • Allow to sit for a few minutes after cooking, then serve with sour cream, black olives, and cilantro.
  • Serve with avocado slices on the side.
