Ingredients

2 large cucumbers

2 teaspoons salt

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon chili oil (adjust for spice preference)

1 tablespoon sugar

2 tablespoons sesame seeds

2 green onions, chopped

Fresh cilantro, for garnish

Instructions

Rinse the cucumbers under cold water and pat dry.

    Place the cucumbers on a cutting board and use the flat side of a heavy knife or a rolling pin to smack each cucumber firmly but gently until they split open. Cut the cucumbers into bite-sized pieces.

      In a large bowl, sprinkle the salt over the cucumber pieces. Toss well and let sit for about 10-15 minutes to draw out excess moisture.

        In a separate bowl, whisk together the minced garlic, soy sauce, rice vinegar, sesame oil, chili oil, and sugar until the sugar is dissolved.

          After the cucumbers have rested, drain any excess liquid that has pooled in the bowl.

            Pour the dressing over the cucumbers and toss gently to coat evenly.

              Allow the cucumbers to marinate for about 10-15 minutes for the flavors to meld.

                Just before serving, sprinkle sesame seeds and chopped green onions over the top. Garnish with fresh cilantro.

                  Serve chilled or at room temperature as a refreshing side dish or appetizer.
