Ingredients

2 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

½ cup vegetable oil

1 cup granulated sugar

½ cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

2 tablespoons granulated sugar (for rolling)

2 teaspoons cinnamon (for rolling)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set this mixture aside.

Cream the Butters: In a large mixing bowl, beat the softened unsalted butter and vegetable oil together until smooth. Gradually add in the granulated sugar and brown sugar, mixing until the mixture is fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.

Mix Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing at low speed until just combined. Be careful not to over-mix.

Prepare Cinnamon Sugar: In a small bowl, combine 2 tablespoons of granulated sugar with 2 teaspoons of cinnamon.

Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Then, roll each ball in the cinnamon sugar mixture until fully coated.

Bake the Cookies: Place the coated balls on the prepared baking sheets, spaced about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

Cool and Serve: Once baked, allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delightful snickerdoodles!
