  • ½ cup powdered sugar for icing
  • 1 tablespoon fresh lemon juice for icing

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  • In a large bowl, beat the softened butter and brown sugar until light and fluffy.
  • Add honey, egg, and vanilla extract to the butter-sugar mixture and mix until smooth.
  • Gradually add the dry ingredients to the wet mixture and mix gently until combined.
  • Fold in the chopped nuts and candied citrus peel, ensuring even distribution.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each.
  • Bake for 10-12 minutes until edges are set and tops are slightly cracked.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Mix powdered sugar and lemon juice for icing, then drizzle over cooled cookies.
